Cooking with Colin Jackson

Colin Jackson is one of the greatest male hurdlers of all time but did you know he was a good cook?

The world record holder hosted an afternoon of cooking with a Q&A in between and his selection of dishes were simple but tasty:

  • Vegetable pasta
  • Meaty spicy gnocchi

I will be making both of these before the end of the year so thanks to Colin for inspiring me even more (I’ve written about how much I love Colin Jackson before).

Ingredients for vegetable pasta

  • 250g mixed fresh or frozen veg
  • 1 vegetable stock cube
  • 150g rigatoni pasta
  • 50g cream cheese (but Colin likes to use about 100g of Philadelphia!)
  • A dash of salt and pepper

Ingredients for meaty spicy gnocchi

  • 150g sausage meat/vegan substitute or 4 sausages of your choice
  • 1 pork stock cube (or a vegan alternative)
  • 150g gnocchi
  • 2g/a tablespoon of smoked paprika
  • A dash of salt and pepper
  • 20g tomato purée
